Sharing our story (and recipe) with Sailing magazine!

It's been such a delight to be cruising aboard Snowcat for the past eight months. The Bahamas have been the best form of social distancing after 2 years of covid precautions.

I've been cooking a lot as we explore remote anchorages and host family and friends. Along the way I was asked to share one of my recipes with Sailing magazine. Here is the SEAsonings article with my Light Key Lime Pie recipe that was featured in the March 2022 issue.

Twenty years ago while sailing on a mountain lake, Karen and Dean Massey hatched a plan to take their twin sons on a sailing adventure. Those boys are now grown and look fondly upon the memories of the four years the family spent living aboard their boat as they sailed across the Atlantic. Karen and Dean are now retired and sailing their cruising catamaran Snowcat II when they aren't living in Steamboat Springs, Colorado.

Karen is a registered dietitian nutritionist and loves to cook. She shares easy, healthy recipes as well as their adventures aboard their Balance catamaran and their life in Steamboat on the website lifeintheboat.com. Karen said there is a lot of overlap between their two worlds and she uses the blog to continue to teach about healthy eating, food safety and food preservation.

"One thing that I have learned over the past 20 years of blue water sailing is to feed your crew well," she said. "On a passage you can't always control the winds or the sea state, but you can end the day with a satisfying meal. One of my most requested desserts is Light Key Lime Pie. It can be prepared underway with minimal cooking and preparation. This cool bite of sunshine perks up the crew on any voyage or enjoyed as an easy dessert at home."

Twenty years ago today our family completed our go Twenty years ago today our family completed our goal of sailing across the Atlantic Ocean. The four of us and an additional French sailor sailed 2850 miles. We sailed from the Canary Islands, making landfall in Tobago 16 days later. We had nothing but water, wind and each other…all of the ingredients for the happiest of memories!

After 6 years of sailing Snowcat II we brought her to Saint Augustine and turned her over to her new owners. Our land-based adventures from The Boat (Steamboat) will continue…stay tuned!
