This version of baked oatmeal takes plain, boring oatmeal to a whole new level. Each bite brings a pleasing burst of peach flavor accompanied by the tangy satisfaction of creamy yogurt.

Ingredients
3cupsrolled oats
⅓cuppacked brown sugar
2teaspoonsbaking powder
1teaspooncinnamon
½teaspoonsalt
1cupmilk
½cupunsweetened applesauce
1egg,lightly beaten
1teaspoonvanilla extract
115 ounce canpeaches in light syrup,drained and reserve ⅓ cup syrup
1 ½cupvanilla yogurt
Instructions
Preheat oven to 350 degrees.
In a large mixing bowl combine oats, brown sugar, baking powder, cinnamon and salt.
Add milk, applesauce, egg and vanilla to the oatmeal mixture. Stir to evenly combine.
Chop peaches into ½" pieces and fold them and the reserved peach syrup into the oat mixture.
Spread the oatmeal mixture in a 1 ½ quart baking dish that has been sprayed with nonstick cooking spray.
Bake for 30-35 minutes. Serve with ¼ cup vanilla yogurt.
